Gone are the days that you would have to buy a whole bottle of natty wine from a store and just savor it at home: slowly but surely, natural wine is making its way into more menus in our favorite restaurants. In fact, you’ll even find them in restaurants that made it to the first iteration of the Michelin Guide in the Philippines!
Whether it’s Pet Nat, orange wine, or an organic low-intervention rosé, these beautiful bottles don’t just make for excellent pairings: they also present an entirely new way to enjoy natural wine in Manila, in a more social setting.

Liyab

Perched on a roof deck, Liyab by Chef Charles Montañez (who you may know from the late-night fun of Mamacita) offers a stunning view of the Bonifacio Global City skyline. You’ll be forgiven, however, for missing it when you can feast your eyes and taste buds on the literally fiery flavors at work in its open kitchen. Every dish (prepared only with proudly local produce) in its intimate 9-course tasting menu influenced by Filipino cuisine is cooked with natural fire, be it grilling, roasting, stewing, or smoking—producing flavors that are an absolute hit with natural wine, and they know it!
Must-try Natural Wine Pairing:
One of our favorite courses at Liyab is their hefty main with pork adobo, beef longganisa, and aged fish, which goes extraordinarily well with supple tannins in Riverland by Aristotelis ke Anthoula.

FLOW

Helmed by Chef Kevin Uy, FLOW is one of the latest additions to Metro Manila’s fine dining scene, and it’s already getting rave reviews and making a mark with its bold, bright flavors bridging the flavors and landscapes of the Philippines and Peru. Each plate in its debut eight-course tasting takes you through from Manila to the Amazon to Lima, inspired by coastlines, rivers, and mountains alike—all achieved with local ingredients celebrating the farmers, fishermen that bring them to the table. That said, it may come as no surprise that aside from its cocktail pairings, FLOW serves natural wines only, by the bottle and by the glass!
Must-try Natural Wine Pairing:
While the bubbly La Combe Rotalier Cremant du Jura goes swimmingly with nearly every course in Flow’s first tasting menu (and makes an occasion extra special), we find that it particularly pops with flavors of Lima, featuring the catch of the day with guyabano and kamote—not to mention the bright Manila with scallops and sea urchin and River, with ulang and tamarillo!)

Bolero

Ever wanted to try food by a chef on the Michelin guide? Head over to Bolero in BGC for modern European fine dining fare created by self-taught Chef Fernando Alcala of Michelin-recognized Kava in Marbella, Spain. Each dish looks like art, (don’t miss the skipjack tuna) and will taste like it too, but you’ll never find yourself intimidated in Bolero’s intimate space. And as with many fine dining spots in Europe, you’ll always have the perfect drink to pair with your food: with so much creativity on the menu, it’s no surprise natural wine makes an appearance, too!

Bolero’s mind-blowing Iberian Pork Chop is grilled and seared to perfection, and somehow, a glass of dark juicy Judith Beck Beck Ink keeps those explosions of flavor going!

Izakaya Geronimo

In Metro Manila’s sea of Japanese restaurants, you need something special to stand out. In Izakaya Geronimo’s case, it’s how it tries to redefine the modern izakaya with luxurious and inventive takes on Japanese bar classics, as well as all-out inventions that put Japanese ingredients front and center. Take, for example, their zingy Toro Wasabi Salsa or their Spicy Tuna with garlic chili oil. Even their beverage options introduce something you don’t see every day: Japanese natural wine!

Any fatty sushi will find a great partner in the Noumin Dry white blend by Tochigi’s Coco Farm & Winery, and we especially love it with Izakaya Geronimo’s Salmon Ikura Donburi!

Manam at The Triangle
Let’s be real: few Filipino restaurants are as universally loved as Manam, be it for its fantastically crispy House Sisig or their Sinigang na Beef Short Rib & Watermelon. Its Michelin-approved flagship restaurant at the Ayala Triangle Gardens, however, has a few tricks up its sleeve. That includes branch-exclusive dishes like their Midnight Beef Ribs Adobo and Sunog na Chopsuey—and get this: a wine list featuring a few natural wine bottles perfect for matching the turns of richness and acidity of Filipino cuisine. You won’t find a combination quite like it!
Must-try Natural Wine Pairing:
If you’re planning to get the family (or the gang) together for a big occasion, we’d recommend going all out by ordering their succulent House Lechon de Leche with camias rice ahead of time. Though you might be tempted to pair this with a white wine or rosé, we’ve found that Judith Beck’s Beck Ink has plenty of acidity and tannin to stand up to that fatty pork while also being lightweight enough not to overpower it. Its juiciness and dark flavors also bring out the best of that lechon’s classic roasted flavor!

Singular
If you’ve been to Bolero, then you’ll already be familiar with Chef Fernando Alcala’s bold, inventive flavors—but not quite the way he works them at Singular. From its cozier spot at The Palace in BGC, Singular takes you on a journey through Spanish culinary heritage, redefined from a long way away here in the Philippines. From its flavorful gazpachuelo and cordero asado to even its unexpected main of squab, it’s Spanish cuisine as you’ve likely not seen it before—-with a pairing option that embraces natural wine, of course!

Singular has wine pairings available for both for Raices and Horizontes tasting menus, and a star pairing we’ve loved in both is their mero asado featuring grouper and creamy rice with Microbio Wines’ zingy Sin Nombre.

Duck & Buvette

French cuisine often comes with a connotation of intimidating fanciness—and that’s an image that Duck & Buvette shatters with a menu chock-full of comfort food straight out of France. “Buvette” itself refers to the country’s more intimate neighborhood eateries, and this cozy corner in Shangri-La Plaza definitely lives up to its name, ranging from classic bistro hits like French onion soup and entrecote steak to all-out indulgences like their Duck Fat Angus Burger with Chips. All best enjoyed as the French do, of course: with wine!

The melt-in-your-mouth Crispy Half Duck Confit is essential for the full Duck & Buvette experience—and it’s made even better with the plummy and spicy La Grapperie Adonis!

Smith & Wollensky
Some say that when you’ve tried one good steak restaurant, you’ve tried them all: such is definitely not the case with New York City’s iconic Smith & Wollensky—so prestigious that it’s been immortalized in iconic films like American Psycho and The Devil Wears Prada! The fabled steakhouse’s very first location in Southeast Asia is in our very own BGC, and its signature dry-aged USDA Prime cuts and American Wagyu are in themselves an occasion: be sure to mark it with a bottle from their extensive wine list, which now includes natural wine!
Must-try Natural Wine Pairing:
You may be tempted to get your usual Bordeaux with their classic USDA Prime 28 Day Dry-Aged Rib-Eye (bone in, of course), but Coco Farm & Winery’s Noumin Rosso from Japan takes the style to new heights with extremely aromatic notes that make any steak sing!

El Born

We have plenty of Spanish restaurants in the Metro, but few of them have the laser focus on Catalan-Mediterranean cuisine that El Born does. Tucked away on the second floor of a Japanese mall, El Born is actually named after the trendy Barcelona neighborhood that serves as a special place for Chef Chef David Amoros and his wife Ivone before they eventually moved to Manila. Don’t miss their fantastic tapas, Chef David’s signature slow-cooked Arroz dishes, and most famously, the signature melt-in-your mouth El Born Cheesecake—and they actually have natural wines on the menu to go with all these best hits!

Many come just for the El Born Cheesecake, and if you want to elevate that experience even further, try it with the Jean-François Ganevat La Combe Rotalier Cremant du Jura. You’re welcome.

Bibio

If there’s any spot in Metro Manila that truly lets natural wine shine with great eats, it’s Bibio. Located on the streets of trendy Poblacion, Bibio embraces all things natural and all things fun: meaning that you won’t just find playful natural wines, but also an equally wild and funky menu featuring plenty of ingredients that are fermented, cured, and preserved—that includes cured yellowfin tuna, beer-battered pumpkin, and their own house sourdough. That said, you can bet the pairings are fantastic. Plus, if you drop by on the right evening, they’ll also have exciting DJ sets and kitchen takeovers waiting for you!

We come back to Bibio time and time again for their addicting Chicken Isol Skewers, and they go fantastically with all the spices you pick up in the Le Mazel Cuvee Briand.

Metiz
First an Asia’s 50 Best Restaurants-lister and now a Michelin Guide Selected Restaurant, Metiz in Karrivin Plaza is chef Stephan Duhesme’s showcase of high-quality local ingredients and traditional Filipino recipes through a modern lens. You can expect plenty of fermentation and aging here in their vegetable- and seafood-forward menu—and that said, it’s no surprise that natural wine makes a perfect pairing with many of their tasting menu’s spunkier dishes.
Must-Try Natural Wine Pairing:
If you’re looking for something versatile that’ll take you all the way from your starter to dessert, you’ll rarely go wrong with sparkling wine. One of our favorites to pair with their bright Ensaladang Gulay and their rich Pork Kilaw Maskara Tart is the crisp La Combe Rotalier Cremant du Jura by Jean-François Ganevat.

Il Lupino Prime Trattoria & Wine Bar

If you’re looking for a romantic date spot that your partner hasn’t been to yet, then renowned restaurateur Peter Zweiner’s Il Lupino Prime in Opus Mall is a great bet. Opened in late 2024, it has all the makings of great night out: intimate, sophisticated interiors; a menu of standout steak, as well as authentic pizza and pasta dishes created in collaboration with Chef Alessio Loddo from Sardinia; and of course, a love for making a meal even better with a glass of wine. Sneak a peek at their huge cellar, with wines from the finest vineyards for every palate, and perhaps you won’t be surprised that they’ve gone the extra mile to include natural wine too!

Here’s one unexpected wine pairing we’ve tried at Il Lupino: the Cozze Alla Tarantina (mussels stew in light chili tomato sauce) and Japanese maker Coco Farm and Winery’s aromatic Noumin Dry!

Dr. Wine

You should already have an idea of what you’re getting into just by the name Dr. Wine. But beyond a great selection of bottles that includes organic and natural wines alike, you’ll also find some of the best examples of classic French cuisine in Metro Manila—which is how they’ve amassed a following that’s earned them branches in Poblacion and Bonifacio Global City. Expect generous portions definitely made for sharing amongst good friends in best hits like the Doctor’s Platter (a safe choice with its great cheese and charcuterie) and their steak tartare with fries, all concocted by their head chef Romain, actually hails from Toulouse, France.

One of Dr. Wine’s signatures is their Organic maple syrup chicken liver mousse, and the aromatic Sebastien Riffault Akmenine Sancerre takes it to another level!
