Made entirely of unripe Chardonnay, this bottle of bubbly is perfect when you’re feeling fancy. Notes of green apples and citrus up front, and toasted brioche with some minerality in the background. This bottle is a great introduction to the world of natural wine— approachable and elegant, complex and vibrant, distinct but familiar. Aged for about 2 years in oak then another 3 years in the bottle using only indigenous yeasts.

The Ganevat family has farmed vines in southern Jura, France, in the town of La Combe since 1650. Fourteen generations later, Jean-François Ganevat has put his family’s estate on the world stage of natural wine, creating a stunning amount of wines per year that find themselves on the wine lists of some of the finest establishments in the world.

Behind the Bottle
Jean-François Ganevat’s 12 hectares in Jura have been organically farmed since 1998, and ceased filtering and adding sulfites to his wines in 2006. He has adopted the use of refrigerated trucks during harvest to chill grapes before vatting, and is especially known for his highly individualized élévage for each specific batch of wine, with all wines seeing aging in a variety of vessels for 2 to 11 years. To say that his grapes are spun into gold is probably not far from the truth.
