Foodies have been abuzz since the Michelin Guide officially named its pick of restaurants in Metro Manila worthy of its Selected List, its Bib Gourmand Award, and its coveted stars. Meanwhile, one thing that we at (Super)Natural are extra excited about is that we’ve spotted a few restaurants on the guide that serve great natural wine with their top-notch menus.

This proves something we already knew: natural wine is a fantastic pairing with so many dishes and cuisines, and we’re psyched to see wines that are better for the planet (and arguably, the palate!) are making it to these recognized spots—and they’re just some of our favorite restaurants in Metro Manila that serve great natural wine.

Manam at The Triangle

While every restaurant on the Michelin Guide’s Metro Manila leg is a point of pride, the excitement hits a different pitch when you see true-blue Filipino food bagging a Bib Gourmand Award the way it did with Manam at the Triangle, the flagship restaurant of one of the country’s most beloved chains. 

The Bib Gourmand Award is given to restaurants serving high-quality food at moderate prices—which is something many will agree Manam embodies. Their flagship location takes it a notch further with branch-exclusive dishes that still embrace very Filipino traditions. The Michelin Guide singles out their standout Lechon Manok and Tutong Longganisa Rice (served with a choice of Red Horse or Sarsi gravy!) as well as their Whole Spatchcock Chicken Inasal with lemongrass and pandan.

One more thing that makes Manam at the Triangle different from its other locations: its first actual wine list, with each bottle chosen to compliment Filipino cuisine. And given how our flavors navigate tart and rich, it’s no wonder that incredibly food-friendly natural wines have made it!

Want a taste of what the Guide recommended? Here’s a pro tip: you need to order both at least a day before you dine there. And if it’s an occasion you’d like to have wine, their smoky Lechon Manok and Tutong Longganisa Rice especially shines with Judith Beck’s dark and juicy Beck Ink, which has a knack for bringing out the best of smokier dishes without feeling too heavy!

Bolero

If you already knew that modern European fine dining spot Bolero was run by a chef with a Michelin Selected restaurant, then this should come as no surprise. Self-taught chef Fernando Alcala got his first brush with the guide for his restaurant Kava in Marbella, Spain—and he’s definitely brought his creativity and experience to his latest distinction in Bonifacio Global City.

Bolero now boasts the Michelin Bib Gourmand Award—and for good reason. Its dishes are a feast for both the eyes and the tastebuds, with plenty of Spanish and Mediterranean soul at the heart of their flavors. Their coal-grilled Iberico Pork Chop and ribeye empanadas officially get a shout-out on the Michelin Guide, but another thing many people love here is their award-winning cheesecake with a molten centre. The menu is great in itself, but it takes on a new edge with the perfect pairing: and as with many fine dining spots in Europe, natural wine makes an appearance on their wine list!

Must-Try Natural Wine Pairing:
One of our favorite pairings at Bolero is their seared-to-perfection Iberian Pork skewers with the dark and juicy Beck Ink by Judith Beck. If you happen to see Milan Nestarec’s aromatic Umami on the wine list, however, it’s a dream with Bolero’s skipjack tuna with ajoblanco!

Metiz

Metiz has long been a fine dining favorite in Metro Manila, joining Asia’s 50 Best Restaurants list in 2023, Tatler Dining’s Best 100 in Asia in 2024, and finally the Michelin Guide’s Selected list in 2025 for its contemporary takes on Filipino heritage recipes—and that’s despite temporarily being closed for renovations for part of the year!

Metiz reopened September this year better than ever, with Chef Stephan Duhesme approaching high-quality local ingredients with even more finesse in its latest (and shortest, at only five courses) tasting menu. Fermentation and house-ageing are still at the heart of every dish, many of which are now seafood- and vegetable-led—reimagining familiar flavors with a modern lens. They have plenty of signature cocktails to choose from, but we find that natural wine allows many of Metiz’s creations to really shine.

Must-Try Natural Wine Pairing:
Few wines are so versatile they could carry you through a five-course tasting menu, but Jean-François Ganevat’s La Combe Rotalier Cremant du Jura is one of them. With plenty of acidity and toastiness, it’s a great match for many of the vegetable and seafood dishes on Metiz’s latest tasting menu—including their bright Ensaladang Gulay and smoky Tuna with Mechado.
