Didier Grappe
Chardonnay Novelin 2016
Made with grapes only from the “Novellin” plot on his estate, Diddier Grappe ferments grapes spontaneously and ages this wine “oullie” in open top stainless steel vats. Its light body is propped up by its mild acidity with notes of wet gravel, licorice, basil, and green tropical fruit, with a very elegant finish.

Behind the Bottle
With different terroirs on his land, Didier Grappe bottles his wines by plot — the Novelin plot is calcerous limestone, while the Longefin plot is densely packed clay.
Using only spontaneous fermentation and absolutely zero sulfites, he uses both stainless steel and old barrels depending on what's needed for the specific vintage. A vocal advocate for planting resistant hybrid grape varieties, he’s blurring the line between tradition and progressiveness, blazing a new path in Jura.
