Spontaneously fermented Pinot Grigio is macerated for 7 days on the skins then aged in wood for 2 years. A dark pinkish amber color, with tropical fruit, citrus, and stony minerality permeating throughout the palate. Behind the Bottle
Following low intervention winemaking principles, Dario's wines are typically aged in large oak casks and are naturally fined for 6 months in steel tanks, with a small amount of sulphites added during bottling. He uses zero chemicals in his vineyards, instead relying on natural fertilizers with copper and sulfur for spray treatments.
