‘Jakot’ named after the Slavic name for Tocai Friulano, Tokaj (get it?), is an orange wine that spends 20 days on the skins before being aged in chestnut barrels. A super complex nose of soft herbs, light spices, and yellow fruits lends itself well to the delicate tannins and vibrant acidity. This may not be everyone’s cup of tea, but it's a chance to walk on the wild side of winemaking with all the cool kids during this age of conformity and ease.

Behind the Bottle
Following low intervention winemaking principles, Dario's wines are typically aged in large oak casks and are naturally fined for 6 months in steel tanks, with a small amount of sulphites added during bottling. He uses zero chemicals in his vineyards, instead relying on natural fertilizers with copper and sulfur for spray treatments.
