Arbois Les Nouvelles Savignin Ouille 2018
From one of our favorite makers out of Jura, comes a wine from old vines of Savignin. This wine is aged in open top barrels and ‘topped up’ or ‘ouille’ to counteract evaporation and prevent over-oxidation, contrary to the traditional Jurassien style. Aromatic with good acidity on the tense, balanced palate transitions to a long, nutty, mineral finish with white florals. Equal parts cerebral and smashable.

Behind the Bottle
In the appellation of Arbois, Philippe Chatillon has tended to his small, 2 hectare vineyard of steep, marl rich soil since 2013. Working biodynamically with no pesticides or chemical fertilizers whatsoever, his extreme philosophy is perhaps best exemplified by his work in the cellar. Although spontaneous fermentation, no fining, and no filtration is normal for natural wine — he uses the vibrations of singing bowls and crystal harps to achieve balance within the large wooden barrels of aging wines. Trust us, it works.
