SuperUglyNoods at Ugly Duck

A 5 course fresh pasta dinner held at Ugly Duck in Poblacion in collaboration with Noodle Lab PH with a wine pairing by (Super)natural wines. Chefs Ally Lim Gonzales of Noodle Lab PH, Matthew Mijares of Ugly Duck, and Luis Locsin of (Super)natural, were able to create a menu that not only highlights some of their favorite flavors and ingredients in fresh pasta, but highlights the synergy between natural wine and food.

The Menu:

Stuffed Gnocchi— Mozzarella stuffed spinach gnocchi, loose mornay sauce, microgreens, parsley & basil oil, togarashi, chili oil.

Paired with: NIEVA YORK (2020) by Microbio Wines, Spain

Irresistibly chuggable with delicious stone fruit & floral notes. Unfiltered and unfined. You can think of this Pet Nat as champagne's cool younger cousin.

Squink Bucatini - squid ink bucatini, roasted seaweed buerre blanc, tobiko, sea grapes, nori, fried capers.

Paired with: FORK & KNIVES WHITE (2019) by Mian Nestarec, Czech Republic

Energetic, youthful, and lightly effervescent. Citrus and cantaloupe notes with a touch of minerality. The bright acid and cuts through the richness of the beurre blanc while the minerality accentuates and highlights our salty sea ingredients.

Lasagna Roll Ups - Fresh beet pasta sheets rolled and filled with mixed mushroom duxelle, mozzarella, XO fonduta, 24 month aged Parmigiano Reggiano DOP. Miso pomodoro, tuyo pangrattato, garlic confit.

Paired with: FORK & KNIVES RED (2019) by Milan Nestarec, Czech Republic

A light, juicy, and tangy red with a pinch of funk and tanned leather. Its vibrancy will cleanse your palate in between bites, while the earthy and funky notes match the mushrooms and miso pomodoro.

3 Ages of Duck - Giant ravioli filled with porcini, truffle and a runny duck egg yolk, fresh pasta made with duck eggs. Duck breast, jus.

Paired with: BECK INK (2019) by La Mazel, France

An easy drinking red blend of Austrian grapes that tastes like a mouthful of summer berries. There’s enough tannin here to tone down the richness of the egg yolk and duck without overwhelming your palate.

Pasta Fritto - Fried pasta, crême of chocolates, berries, mascarpone.

Paired with: CHARBONNIERES (2018) by La Mazel, France

A vibrant and off- dry Chardonnay with a bit of spritz and some notes of citrus & green apple. High acidity and light sweetness are able to stand up to the sweetness of the dessert and cleanse your palate in between bites.
