“By focusing on humble locally grown produce,” says Kusinero Luis Locsin, “we showed people the potential of what happens when we look inward to our cuisine instead of outward to so called ‘luxury ingredients’. Even with our wine, we were able to do away with many so called ‘rules’ in pairings.

We wanted to be unconventional in almost every sense — from the food, to the concept, to the wine. Perhaps the most enjoyable part of this experience for me was seeing all of our guests walk into a room as complete strangers, then walk out as friends. Seeing people connect the dots on how they all know each other was peak Manila culture, and makes us realize that as humans we’re all so close to each other despite our differences.”

We are incredibly grateful to all those who joined us in our very first gatherings, and to everyone who helped us make this magic possible: the farmers from Kai Farms who lovingly grew the produce, Jenny, Ash, Vince and the amazing LVR team, Matt and Bianca for helping out in the kitchen, all the friends who joined us for dry runs, and Joanna for all the support throughout R&D.
